Have you ever gone to a restaurant and had a dish just linger on your tongue?! I sure have…on multiple occasions. When that happens I always find myself in the kitchen trying to recreate it.
This summer I had the pleasure of going to Blooming Hill Farm and had the most DELICIOUS Beet Salad! Lucky for me, they sell their fresh produce on site. Talk about a true farm to table experience. I couldn’t help but peruse through their Farmer’s Market. I picked up the most gorgeous Golden Beets to add some color to the recreation I was already planning in my head. The wheels were immediately turning and I just KNEW this was going to be one of my favorite recipes to date. I was SO right!
Once I pulled together all the ingredients I needed, I went off the explore the beautiful farm itself. Nestled in a rural area of New York, these grounds are the perfect backdrop to any country-themed wedding or event. Turns out, I’m not the only one who thinks so! Blooming Hill Farm hosts the dreamiest milestone celebrations. Think: romantic tent beneath the stars with rustic, yet chic, accents throughout. I fell in love with the entire aesthetic and it got me thinking…could this city girl own a farm one day?!
Definitely not in the near future; but, once retirement hits, I wouldn’t hate the idea of it! There’s something truly charming about the simple life. Until then, I’ll just visit, collect inspiration & create DELICIOUS farm to fork recipes, like this Beet Salad with Raspberry Vinaigrette.
